Cooking With Jed: Fish + Bacon22.05.11

This is Jed.
Jed loves cooking.
Most of all, Jed loves coming up with flavour combinations for his dinner.
I was chatting to his Mum, Kate, about some of his ideas and we came to the conclusion that they would actually translate quite nicely into adult meals. I requested that Kate take a photo of Jed’s next creation (pictured above) and then challenged myself to cook an adult version.
As a very keen cook, I am always looking for new ways to find inspiration in the kitchen, and I have really enjoyed getting my creative juices flowing via Jed!
The combo pictured above is very clever: fish fingers with bacon and mashed potato (plus broccoli and sweetcorn – Mum’s orders!). He actually wanted to also add sausage, but Kate gently declined having three types of ‘meat’ for dinner. Mum knows best!

I wrestled with many different variations on the fish+bacon theme but kept coming back to this stupidly simple one; a nice swordfish fillet wrapped in a salty piece of proscuitto. Scroll down to get the recipe.
I’d like to continue creating adult versions of Jed’s other genius combinations so keep your eyes peeled as this may become a regular segment. We won’t put too much pressure on him though, it’s inevitable that some of his combinations will be a flop, but that’s all part of the fun!

Swordfish wrapped in proscuitto
serves 4
4 swordfish fillets
4 slices proscuitto
Freshly cracked black pepper
Lemon wedges, to serve
Sauteed potatoes and steamed broccoli, to serve
1. Pre-heat the oven to 180C. Season each fish fillet with freshly cracked pepper on both sides (you don’t need to salt them as the proscuitto is quite salty).
2. Wrap each fish fillet with one slice of proscuitto. Place the fish fillets on a non-stick baking tray (or on top of baking paper on a tray), making sure the proscuitto ends are tucked under each fillet.
3. Bake for 15-20 minutes depending on thickness. Allow to rest, covered with foil on a warm plate, for 3-4 minutes. This will make them nice and juicy. Serve with lemon wedges, potato and broccoli.
